The name says it all with this delicious soup. It are often prepared beforehand and stored in an airtight container within the fridge for 3-4 days or for extended within the freezer, so you usually have an excellent lunch option available .

Ingredients
1 tsp extra virgin vegetable oil (5 mls)
1 cloves garlic, crushed (3 grams)
1/4 brown onion, diced (25 grams)
1 stalks celery, diced (40 grams)
1 medium carrot, diced (70 grams)
1/2 courgette, diced (55 grams)
1/2 cup white cabbage, shredded (25 grams) 200 grams tinned tomatoes
50 grams tinned chickpeas
1/4 cup quinoa, uncooked, rinsed (45 grams) 1/2 tsp dried rosemary (0.5 grams)
1/2 tsp dried thyme leaves (0.5 grams)
2 cups water (500 mls)
salt
pepper
Method
Heat oil during a saucepan over medium-high heat. Add garlic, onion and celery and sauté for 1-2 minutes or until soft.
Add all remaining ingredients, stir to mix and convey to the boil. Reduce to a mild simmer for hour , until veggies are tender and quinoa is cooked through. Keep an eye fixed on the pot and add a touch more water if needed to prevent the soup getting too dry.
Season with salt and pepper and serve.
Serves one. 350 calories per serve.
